2 cups cooked, shredded chicken (preferably rotisserie)

8 flour tortillas (10-inch size)

1 cup sour cream

1 can (10 oz) cream of chicken soup

1 cup shredded Monterey Jack cheese

1 cup shredded cheddar cheese

1/2 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cumin

1/4 teaspoon black pepper

1 tbsp fresh cilantro, chopped (for garnish)

1 tablespoon olive oil

1/2 cup chicken broth (optional, for a thinner sauce)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Sauce: In a mixing bowl, combine the sour cream, cream of chicken soup, garlic powder, onion powder, cumin, and black pepper. Mix well until smooth and set aside.

      Assemble the Filling: In a separate bowl, combine the shredded chicken with half of the shredded Monterey Jack and cheddar cheese. Add 1/3 of the prepared sauce to the chicken mixture and mix until well combined.

        Fill the Tortillas: Take a flour tortilla and spoon about 1/3 cup of the chicken mixture down the center. Roll the tortilla tightly and place seam-side down in a greased 9x13 inch baking dish. Repeat with the remaining tortillas.

          Cover with Sauce: Once all tortillas are filled and placed in the baking dish, pour the remaining sauce evenly over the top. If you prefer a thinner sauce, you can mix in chicken broth to achieve the desired consistency.

            Top with Cheese: Sprinkle the remaining Monterey Jack and cheddar cheese over the sauced enchiladas.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and lightly golden.
