Ingredients
  

1 pound boneless, skinless chicken breasts

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

2 cans (15 oz each) white beans (e.g., cannellini or great northern), drained and rinsed

4 cups chicken broth

1 cup frozen corn

1 can (4 oz) diced green chiles

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon paprika

½ teaspoon salt (or to taste)

¼ teaspoon black pepper

1 cup heavy cream

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Avocado slices (for garnish)

Shredded cheese (monterey jack or pepper jack, for serving)

Instructions
 

In a large pot over medium heat, add the olive oil. Once hot, add diced onions and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Add the chicken breasts to the pot, along with the chicken broth, white beans, corn, diced green chiles, cumin, chili powder, paprika, salt, and pepper. Bring the mixture to a boil.

        Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 20-25 minutes, or until the chicken is fully cooked and tender.

          Remove the chicken from the pot and shred it using two forks. Return the shredded chicken back into the pot.

            Stir in the heavy cream and lime juice. Let cook for an additional 5-10 minutes, allowing the flavors to meld together.

              Taste and adjust seasoning if needed, adding more salt or lime juice according to your preference.

                Serve warm, garnished with fresh cilantro, avocado slices, and shredded cheese on top.
