Ingredients

1.5 lbs baby potatoes, washed and halved

4 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried thyme

1 teaspoon fresh parsley, chopped (for garnish)

Zest of 1 lemon

Instructions

Preparation of Potatoes: In a large pot, add the washed and halved baby potatoes. Fill the pot with enough water to cover the potatoes by an inch. Add 1 teaspoon salt. Bring to a boil over medium-high heat and cook the potatoes for about 10-12 minutes, or until they are tender when pierced with a fork. Drain and set aside.

Garlic Sauce Creation: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned. Be careful not to burn the garlic as it will turn bitter.

Creating Creamy Base: Lower the heat and pour in the heavy cream, stirring continuously to combine with the garlic. Sprinkle in the grated Parmesan cheese and mix until the cheese has melted and the sauce is smooth and creamy. If the sauce is too thick, feel free to add a splash of milk or additional cream to achieve your desired consistency.

Seasoning the Sauce: Season the garlic sauce with salt, black pepper, dried thyme, and lemon zest. Stir to incorporate the flavors.

Combining Potatoes and Sauce: Gently add the drained baby potatoes to the skillet with the creamy garlic sauce. Toss the potatoes until they are well coated with the sauce. Cook on low heat for another 3-5 minutes just to warm the potatoes through.

Final Touches: Remove from heat and sprinkle with fresh parsley for a burst of color and flavor. Serve hot as a delightful side dish.
