Ingredients

2 cups whole milk

1/2 cup granulated sugar

1/4 cup cornstarch

1/4 teaspoon salt

1 teaspoon pure vanilla extract

1 tablespoon unsalted butter

1 cup heavy cream

Optional toppings: chocolate sauce, crushed nuts, sprinkles

Instructions

In a medium saucepan, whisk together the sugar, cornstarch, and salt until well combined.

Gradually whisk in the milk, ensuring there are no lumps.

Place the saucepan over medium heat and cook the mixture, stirring constantly, until it thickens and bubbles begin to form (about 5-7 minutes).

Once thickened, remove the saucepan from the heat and stir in the vanilla extract and butter until melted and smooth.

Transfer the pudding to a bowl and let it cool to room temperature. Once cooled, fold in the heavy cream until fully incorporated.

Pour the pudding mixture into popsicle molds, leaving a little space at the top for expansion.

Insert sticks and freeze for at least 4-6 hours, or until completely solid.

To remove the popsicles, run warm water over the outside of the molds for a few seconds before gently pulling them out.

Serve as is or drizzle with chocolate sauce and sprinkle with nuts or sprinkles if desired.

Prep Time: 15 minutes | Total Time: 6 hours and 15 minutes | Servings: 8 popsicles
