Ingredients

1 pound large shrimp, peeled and deveined

8 ounces linguine or spaghetti

4 tablespoons unsalted butter

3 tablespoons extra virgin olive oil

4 cloves garlic, minced

1/4 teaspoon red pepper flakes (adjust to taste)

1/2 cup dry white wine (such as Sauvignon Blanc)

Juice of 1 lemon

Zest of 1 lemon

Salt and freshly ground black pepper, to taste

1/4 cup fresh parsley, chopped

Grated Parmesan cheese, for serving

Lemon wedges, for garnish

Instructions

Cook the Pasta:

In a large pot of salted boiling water, cook the linguine or spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

      Sauté the Shrimp:

In a large skillet over medium heat, melt 2 tablespoons of butter and 3 tablespoons of olive oil. Once hot, add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.

          Add Shrimp:

Add the shrimp to the skillet and season with salt and pepper. Cook for about 2-3 minutes on each side until the shrimp turns pink and opaque. Remove the shrimp from the skillet and set aside.

              Deglaze with Wine:

Pour the white wine into the skillet, scraping up any browned bits from the bottom. Allow it to simmer for about 2-3 minutes to reduce slightly.

                  Combine Ingredients:

Return the shrimp to the skillet, add the lemon juice and zest, and the remaining 2 tablespoons of butter. Stir to combine and let the sauce simmer for another minute.

                      Mix with Pasta:

Add the cooked pasta to the skillet, tossing gently to coat. If the mixture seems dry, add reserved pasta water a little at a time until you reach the desired consistency.

                          Finishing Touches:

Stir in the chopped parsley and adjust seasonings as necessary. Remove the skillet from the heat.

                              Serve:

Plate the shrimp scampi and garnish with grated Parmesan cheese and lemon wedges. Enjoy your Ultimate Classic Shrimp Scampi!
