Ingredients
  

1.5 lbs ground beef

1 cup breadcrumbs

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese, divided

1/2 cup milk

1 large onion, finely chopped

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1 egg

2 tablespoons Worcestershire sauce

1 teaspoon salt

1/2 teaspoon black pepper

1 cup corn kernels (frozen or fresh)

1 cup diced bell peppers (any color)

1 cup marinara sauce

1/2 cup sour cream

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, 1/2 cup of mozzarella cheese, milk, chopped onion, minced garlic, chopped parsley, egg, Worcestershire sauce, salt, and black pepper. Mix until well blended.

      Gently fold in the corn kernels and diced bell peppers until evenly distributed throughout the meat mixture.

        Transfer the meat mixture into a greased 9x13 inch baking dish and shape it into a loaf form.

          Spread the marinara sauce evenly over the top of the meatloaf.

            Cover the meatloaf with aluminum foil and bake in the preheated oven for 45 minutes.

              Remove the foil and sprinkle the remaining 1/2 cup of mozzarella cheese on top. Return to the oven and bake uncovered for an additional 15-20 minutes, or until the cheese is bubbly and golden.

                Once cooked, remove from the oven and let it rest for about 10 minutes.

                  For a creamy touch, dollop sour cream on top before serving. Garnish with additional parsley if desired.
