Ingredients
  

1 can of tuna (5 oz), drained

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1/4 cup celery, finely chopped

1/4 cup red onion, finely chopped

1/2 cup shredded cheddar cheese

1/2 teaspoon lemon juice

Salt and pepper to taste

4 large flour tortillas

1 cup spinach or lettuce leaves

Olive oil or butter (for grilling)

Instructions
 

In a mixing bowl, combine the drained tuna, mayonnaise, Dijon mustard, celery, red onion, lemon juice, and half of the shredded cheddar cheese. Stir well until all ingredients are evenly mixed. Season with salt and pepper to taste.

    Lay out a flour tortilla and place a generous portion of the tuna mixture in the center. Add a handful of spinach or lettuce leaves on top of the tuna.

      Sprinkle the remaining cheddar cheese over the top of the filling.

        Fold the sides of the tortilla inward, then roll it up tightly from the bottom to enclose all the filling.

          Heat a skillet over medium heat and add a little olive oil or butter. Once hot, place the wrap seam-side down in the skillet.

            Cook for 2-3 minutes until the bottom is golden brown, then carefully flip and cook the other side for another 2-3 minutes, until both sides are crispy and the cheese is melted.

              Remove from the skillet, let cool for a minute, then slice in half diagonally. Serve warm.
