Ingredients
  

2 boneless, skinless chicken breasts

1 can (15 oz) white beans (great northern or cannellini), rinsed and drained

1 can (15 oz) corn, drained

1 medium onion, diced

2 cloves garlic, minced

1 can (4 oz) diced green chilies

1 tsp ground cumin

1 tsp chili powder

1 tsp paprika

½ tsp salt (or to taste)

½ tsp black pepper

1 cup low-sodium chicken broth

8 oz cream cheese, softened

Optional toppings: chopped cilantro, avocado, shredded cheese, sour cream, lime wedges

Instructions
 

Prepare the Chicken: Place the boneless chicken breasts at the bottom of the crockpot.

    Add the Veggies: Sprinkle the diced onion and minced garlic over the chicken.

      Mix in the Beans and Corn: Add the drained white beans, corn, and diced green chilies.

        Season the Mix: Sprinkle the cumin, chili powder, paprika, salt, and black pepper evenly over the top of the mixture.

          Add the Broth: Pour the chicken broth over all the ingredients in the crockpot.

            Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and shreds easily with a fork.

              Stir in the Cream Cheese: About 30 minutes before serving, add the softened cream cheese to the crockpot and stir until melted and fully incorporated.

                Shred the Chicken: Remove the chicken from the crockpot, shred it with two forks, and return it to the chili. Stir well.

                  Serve: Ladle the chili into bowls and top with your choice of cilantro, avocado, shredded cheese, sour cream, and lime wedges.
