Ingredients
  

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup chopped pecans

1/2 cup mini chocolate chips (optional)

1/2 cup white corn syrup

1 teaspoon ground cinnamon

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Cream the Butter and Sugars: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.

      Add Egg and Vanilla: Beat in the egg and vanilla extract until fully incorporated.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon.

          Mix Dry Ingredients: Gradually add the dry mixture to the wet mixture, mixing until just combined. Be careful not to overmix.

            Fold in Pecans and Chocolate Chips: Gently fold in the chopped pecans and mini chocolate chips (if using) until evenly distributed.

              Make the Cookie Dough Balls: Using a cookie scoop or tablespoon, scoop out cookie dough balls and place them on the prepared baking sheet about 2 inches apart.

                Create the Pecan Topping: In a small bowl, combine the white corn syrup with a sprinkle of pecans and a pinch of cinnamon. Drizzle a small amount over each cookie dough ball.

                  Bake the Cookies: Bake in the preheated oven for 10-12 minutes or until the edges are golden and the centers look slightly underbaked.

                    Cool and Serve: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
