1 lb Italian sausage (mild or spicy, your preference)

1 small onion, diced

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

4 cups chicken or beef broth

2 teaspoons Italian seasoning

1 teaspoon sugar (optional)

8 oz lasagna noodles, broken into pieces

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Fresh basil or parsley for garnish

Olive oil for sautéing

Salt and pepper to taste

Cook the Meat: In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart as it cooks, about 5-7 minutes. Drain any excess fat.

    Sauté Vegetables: Add the diced onion and minced garlic to the pot. Sauté until the onion is translucent, about 3-4 minutes.

      Add Tomatoes and Broth: Stir in the crushed tomatoes, chicken or beef broth, Italian seasoning, and sugar (if using). Bring the mixture to a gentle boil.

        Cook the Noodles: Add the broken lasagna noodles to the pot. Reduce heat and let it simmer until the noodles are tender, about 10-12 minutes.

          Prepare the Cheese Mixture: In a medium bowl, mix together the ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese. Season lightly with salt and pepper.

            Combine and Simmer: Once the noodles are cooked, remove the pot from heat. Gently stir in the cheese mixture until it’s slightly melted and combined.
