Ingredients
  

1 lb ground beef (or Italian sausage)

1 medium onion, diced

2 cloves garlic, minced

1 (28 oz) can crushed tomatoes

2 (15 oz) cans tomato sauce

4 cups chicken or vegetable broth

1 tsp dried basil

1 tsp dried oregano

1/2 tsp red pepper flakes (optional)

8 oz lasagna noodles, broken into pieces

2 cups fresh spinach

1 cup ricotta cheese

1 1/2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil for garnish

Instructions
 

In a large pot, brown the ground beef or sausage over medium heat until fully cooked. Drain excess fat if necessary.

    Add the diced onion and minced garlic to the pot and sauté until the onion becomes translucent, about 5 minutes.

      Stir in the crushed tomatoes, tomato sauce, and broth. Mix in the dried basil, oregano, red pepper flakes (if using), and salt and pepper to taste. Bring to a simmer.

        Once simmering, add the broken lasagna noodles to the pot. Cook until the noodles are al dente, according to package instructions (about 8-10 minutes).

          In the last few minutes of cooking, stir in the fresh spinach until wilted.

            To serve, ladle the soup into bowls and add a generous dollop of ricotta cheese to each serving. Top with shredded mozzarella and grated Parmesan.

              Garnish with fresh basil and enjoy your delicious lasagna soup!
