Ingredients
  

1 lb ground beef or Italian sausage

1 medium onion, diced

3 cloves garlic, minced

1 (28 oz) can of crushed tomatoes

4 cups beef broth

1 tablespoon tomato paste

2 teaspoons dried oregano

1 teaspoon dried basil

1 teaspoon sugar

Salt and pepper, to taste

8 uncooked lasagna noodles, broken into pieces

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions
 

In a large pot, over medium heat, brown the ground beef or Italian sausage until cooked through. Drain excess fat if necessary.

    Add the diced onion and minced garlic to the pot. Sauté for about 3-4 minutes, until the onion is translucent.

      Stir in the crushed tomatoes, beef broth, tomato paste, oregano, basil, sugar, salt, and pepper. Bring the mixture to a simmer.

        Once simmering, add the broken lasagna noodles to the soup. Cook for 10-12 minutes, stirring occasionally, until the noodles are al dente.

          In a small bowl, mix the ricotta cheese with a pinch of salt and pepper. This will be used to dollop into each serving.

            Once the noodles are cooked, remove the pot from heat. Stir in the mozzarella cheese and half of the Parmesan cheese until melted and well combined.

              Ladle the soup into bowls, and top each serving with a dollop of the ricotta cheese mixture and a sprinkle of the remaining Parmesan cheese.

                Garnish with fresh basil leaves for an extra touch of flavor.
