2 ½ cups all-purpose flour

1 tsp baking soda

1 tsp baking powder

½ tsp salt

1 cup unsalted butter, softened

1 cup brown sugar, packed

½ cup granulated sugar

2 large eggs

2 tsp vanilla extract

1 tsp ground cinnamon

½ cup chopped pecans (optional)

½ cup raisins (optional)

For the Cinnamon Filling:

¼ cup unsalted butter, softened

1/3 cup brown sugar, packed

1 tbsp ground cinnamon

For the Cream Cheese Frosting:

4 oz cream cheese, softened

¼ cup unsalted butter, softened

1-2 cups powdered sugar (to taste)

1 tsp vanilla extract

1-2 tbsp milk (to desired consistency)

Instructions
 

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

    In a bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.

      In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar with an electric mixer until light and fluffy.

        Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

          Gradually add the dry ingredients to the wet mixture, mixing until just combined.

            For the filling, in a small bowl, combine ¼ cup softened butter, brown sugar, and ground cinnamon until smooth.

              Scoop out half of the cookie dough and roll it out on a lightly floured surface to about ¼ inch thickness.

                Spread half of the cinnamon filling over the rolled-out dough. If using, sprinkle chopped pecans and raisins on top.

                  Roll the dough tightly into a log, then slice into 1-inch thick pieces and place on the prepared baking sheets.

                    Repeat with the remaining cookie dough and filling.

                      Bake for 10-12 minutes, or until the edges are lightly golden.

                        For the cream cheese frosting, beat together the softened cream cheese, butter, powdered sugar, vanilla extract, and milk until smooth and creamy.

                          Allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to a wire rack.

                            Once cool, generously drizzle or spread the cream cheese frosting over the top of each cookie.
