½ cup unsweetened cocoa powder

2 tsp baking powder

½ tsp baking soda

½ cup brown sugar, packed

1 cup sour cream

½ cup brewed coffee, cooled

½ cup vegetable oil

3 large eggs

4 cups powdered sugar

½ cup brewed coffee, cooled

1 tsp vanilla extract

Pinch of salt

For the Chocolate Ganache:

1 cup heavy cream

8 oz semi-sweet chocolate, chopped

Instructions

Preheat Oven:

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

      Combine Dry Ingredients:

In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.

          Mix Wet Ingredients:

In a large mixing bowl, combine the granulated sugar, brown sugar, sour cream, cooled coffee, vegetable oil, eggs, and vanilla extract. Beat on medium speed until smooth and well combined.

              Incorporate Dry Ingredients:

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

                  Bake the Cakes:

Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Once done, let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

                      Prepare Coffee Buttercream Frosting:

In a large bowl, beat the softened butter with an electric mixer until creamy. Gradually add the powdered sugar, mixing on low speed. Slowly pour in the brewed coffee and vanilla extract, mixing until you reach a smooth, spreadable consistency. Add a pinch of salt to balance the sweetness.

                          Prepare Chocolate Ganache:

In a small saucepan, heat the heavy cream over medium heat until just boiling. Remove from heat and add the chopped chocolate. Let it sit for a minute, then stir until smooth and glossy. Allow to cool slightly.

                              Assemble the Cake:

Place one cake layer on a serving plate. Spread a generous amount of coffee buttercream frosting on top. Place the second cake layer on top and frost the top and sides of the entire cake with the remaining buttercream.

                                  Add Ganache:

Once the ganache has cooled but is still pourable, drizzle it over the top of the frosted cake, allowing it to drip down the sides.

                                      Serve:

Allow the cake to set for about 15 minutes before slicing. Serve with a hot cup of coffee for the perfect pairing!
