Thai Peanut Chicken Stir-Fry

Ingredients
  

1 lb (450g) chicken breast, sliced into thin strips

2 tablespoons vegetable oil

1 cup bell peppers, sliced (mix of red and green)

1 cup broccoli florets

1 cup snap peas

3 garlic cloves, minced

1 tablespoon fresh ginger, grated

1/4 cup peanut butter (smooth or crunchy)

1/4 cup soy sauce (low sodium)

2 tablespoons honey or brown sugar

2 tablespoons rice vinegar

1 tablespoon sesame oil

1/2 teaspoon red pepper flakes (adjust for spice)

Fresh cilantro, for garnish

Chopped peanuts, for garnish

Cooked jasmine rice or rice noodles, for serving

Instructions
 

Prepare the Chicken: In a bowl, mix together the sliced chicken with 1 tablespoon of soy sauce and set aside for 15 minutes to marinate.

    Make the Peanut Sauce: In a small bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, and red pepper flakes until smooth and well combined. Add a little water if needed to reach your desired consistency.

      Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until it's cooked through and golden brown, about 5-7 minutes. Remove the chicken from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, add the remaining tablespoon of oil. Add the garlic and ginger, sautéing for about 30 seconds until fragrant. Then, add the bell peppers, broccoli, and snap peas. Stir-fry the vegetables for about 4-5 minutes, until they are crisp-tender.

          Combine Chicken and Sauce: Return the cooked chicken to the skillet with the vegetables. Pour the peanut sauce over the chicken and veggies, tossing everything together to coat evenly. Cook for an additional 2-3 minutes, until heated through.

            Serve: Serve the stir-fry over cooked jasmine rice or rice noodles. Garnish with fresh cilantro and chopped peanuts for added texture and flavor.
