Ingredients

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup fresh pineapple, diced

1 bell pepper (red or yellow), sliced

1/2 cup red onion, sliced

1/4 cup teriyaki sauce

2 tablespoons soy sauce

1 tablespoon honey

1 clove garlic, minced

1 teaspoon ginger, grated

1 tablespoon sesame seeds (for garnish)

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Aluminum foil (for packets)

Instructions

Preheat Oven or Grill: Preheat your oven to 400°F (200°C) or prepare a grill at medium heat.

Prepare Sauce: In a small bowl, combine the teriyaki sauce, soy sauce, honey, minced garlic, and grated ginger. Whisk until well mixed.

Create Foil Packets: Tear off large pieces of aluminum foil (about 12x18 inches) and lay them flat. For each packet, place a portion of the diced chicken in the center of the foil.

Add Vegetables and Pineapple: Top the chicken with diced pineapple, sliced bell pepper, and red onion.

Pour Sauce: Drizzle a generous amount of the teriyaki sauce mixture over the chicken and vegetables. Sprinkle with salt and pepper to taste.

Seal Packets: Fold the foil over the chicken and veggies, crimping the edges tightly to seal the packets. Ensure they are well-sealed to keep moisture inside.

Cook: Place the foil packets on a baking sheet in the oven or on the grill. Cook for 20-25 minutes, until the chicken is thoroughly cooked and tender.

Check Doneness: Carefully open a packet to ensure chicken is cooked through. It should reach an internal temperature of 165°F (75°C).

Serve: Remove the packets from heat. Unwrap the foil carefully to avoid steam burn. Garnish with sesame seeds and fresh cilantro before serving.

Enjoy: Serve the teriyaki chicken and pineapple directly from the packets or transfer to plates, enjoying the delicious flavors and easy cleanup!
