Ingredients

1 cup strong brewed coffee, cooled

3 tablespoons coffee liqueur (optional)

2 cups mascarpone cheese

1 cup heavy whipping cream

½ cup granulated sugar

1 teaspoon vanilla extract

12-16 ladyfinger cookies

Cocoa powder for dusting

Dark chocolate shavings for garnish (optional)

Instructions

In a medium bowl, mix the cooled coffee and coffee liqueur (if using). Set aside.

In a separate large mixing bowl, whip the heavy cream until soft peaks form. Gradually add the granulated sugar and continue whipping until stiff peaks form.

Gently fold the mascarpone cheese and vanilla extract into the whipped cream until well combined. Be careful not to deflate the whipped cream.

Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy.

In a rectangular dish, layer half of the soaked ladyfingers at the bottom.

Spread half of the mascarpone mixture over the ladyfingers.

Repeat the process with another layer of soaked ladyfingers and the remaining mascarpone mixture on top.

Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight to let the flavors meld.

Before serving, dust the top generously with cocoa powder and sprinkle with dark chocolate shavings if desired.
