Ingredients
  

1 cup all-purpose flour

1/2 cup powdered sugar (plus extra for dusting)

1/2 cup unsalted butter, softened

2 large eggs

1 cup granulated sugar

1/4 cup fresh lemon juice (about 2 lemons)

1 teaspoon lemon zest

1/2 teaspoon baking powder

A pinch of salt

Instructions
 

Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish or line it with parchment paper, leaving some overhang for easy removal.

    In a medium bowl, combine the softened butter, 1/2 cup powdered sugar, and flour. Mix until a crumbly dough forms.

      Press the dough evenly into the bottom of the prepared baking dish. Bake in the preheated oven for 15 minutes, or until lightly golden.

        While the crust is baking, whisk together the eggs, granulated sugar, lemon juice, lemon zest, baking powder, and a pinch of salt in another bowl until well combined.

          Once the crust has finished baking, pour the lemon filling over the hot crust and return to the oven.

            Bake for an additional 20-25 minutes, or until the filling is set and slightly golden around the edges.

              Allow the lemon bars to cool in the pan on a wire rack. Once cooled, refrigerate for at least 2 hours for optimal texture.

                Dust with powdered sugar before cutting into squares. Enjoy your refreshing treat!
