Ingredients
  

1 cup all-purpose flour

1/2 cup unsalted butter, softened

1 1/4 cups granulated sugar

1 large egg

1 tsp vanilla extract

1/2 tsp almond extract

1/2 tsp baking powder

1/4 tsp salt

1 cup powdered sugar (for coating)

1 cup white chocolate chips (for coating)

1-2 tablespoons sprinkles (optional)

Instructions
 

Prepare the Dough: In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This usually takes about 2-3 minutes.

    Add Wet Ingredients: Beat in the egg, vanilla extract, and almond extract until well combined.

      Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, mixing until just combined.

        Chill the Dough: Cover the dough with plastic wrap and refrigerate for at least 1 hour, or until firm.

          Shape the Truffles: Preheat your oven to 350°F (175°C). Roll the chilled dough into small balls (about 1 inch in diameter) and place them on a parchment-lined baking sheet.

            Bake: Bake the cookie balls for 10-12 minutes or until the edges are lightly golden. Let them cool completely on a wire rack.

              Coat with Chocolate: Once cooled, melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.

                Dip Classy: Dip each cooled cookie ball into the melted white chocolate, ensuring it's fully coated. Allow excess chocolate to drip off and place on a baking sheet lined with parchment paper.

                  Sprinkle Magic: While the chocolate is still wet, sprinkle with decorative sprinkles if desired.

                    Chill to Set: Place the truffles in the fridge for about 30 minutes to let the white chocolate firm up.
