For the Sugar Cookie Crust:

1 ½ cups all-purpose flour

½ teaspoon baking powder

¼ teaspoon salt

½ cup unsalted butter, softened

¾ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

For the Cheesecake Layer:

16 ounces cream cheese, softened

½ cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1 tablespoon all-purpose flour

½ teaspoon lemon juice (optional, for tanginess)

For the Topping:

½ cup colorful sprinkles (optional)

Powdered sugar for dusting (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line an 8x8 inch baking pan with parchment paper, letting some overhang for easy removal.

    Make the Sugar Cookie Crust:

      - In a bowl, whisk together the flour, baking powder, and salt. Set aside.

        - In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

          - Add in the egg and vanilla extract, mixing until well combined.

            - Gradually add the flour mixture until just incorporated. The dough will be thick.

              - Press the dough evenly into the bottom of the prepared baking pan. Bake for 10-12 minutes until it starts to turn lightly golden around the edges. Remove from the oven and set aside to cool slightly.

                Prepare the Cheesecake Filling:

                  - In a large bowl, beat the softened cream cheese with a hand mixer until creamy and smooth.

                    - Gradually add in the granulated sugar and beat until well combined.

                      - Add the vanilla extract, eggs (one at a time), flour, and lemon juice (if using), mixing until smooth and combined.

                        Assemble the Bars:

                          - Pour the cheesecake filling over the cooled sugar cookie crust, spreading it evenly.

                            - Tap the baking pan on the counter gently to remove any air bubbles.

                              Bake: Bake the assembled dessert in the preheated oven for 25-30 minutes, or until the center is set and only slightly jiggles when moved.

                                Cool Down: Remove from the oven and allow to cool in the pan for about 30 minutes. Then transfer to the refrigerator and chill for at least 3 hours, or until completely set.
