For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

⅓ cup granulated sugar

For the cheesecake filling:

2 packs (8 oz each) cream cheese, softened

¾ cup granulated sugar

1 tsp vanilla extract

2 large eggs

1 cup sour cream

1 tbsp all-purpose flour

A pinch of salt

For the strawberry swirl:

1 cup fresh strawberries, hulled and sliced

¼ cup granulated sugar

1 tbsp lemon juice

1 tbsp cornstarch (optional, for thickening)

Instructions
 

Prepare the crust: Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and ⅓ cup sugar until well mixed. Press this mixture firmly into the bottom of a 9-inch springform pan evenly. Bake for 10 minutes, then remove and let cool.

    Make the strawberry swirl: In a saucepan, combine sliced strawberries, ¼ cup sugar, and lemon juice over medium heat. Cook for about 5-7 minutes, stirring gently until the strawberries soften and release their juices. If you'd like a thicker swirl, add cornstarch dissolved in a bit of water and cook for an additional 3 minutes. Remove from heat and let cool slightly before puréeing until smooth in a blender.

      Prepare the cheesecake filling: In a large mixing bowl, beat the softened cream cheese with ¾ cup sugar and vanilla extract until creamy and smooth. Add in the eggs one at a time, mixing well after each addition. Finally, add the sour cream, flour, and a pinch of salt, mixing until well combined and smooth.

        Assemble the cheesecake: Pour the cheesecake filling into the cooled crust. Spoon dollops of the strawberry purée over the top of the cheesecake mixture. Use a butter knife or toothpick to gently swirl the purée into the cheesecake, creating a marbled effect.
