Ingredients
  

1 cup quinoa

2 cups vegetable broth or water

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 red bell pepper, diced

1 avocado, diced

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup cilantro, chopped

Juice of 2 limes

1 tsp ground cumin

1 tsp chili powder

Salt and pepper to taste

Olive oil for drizzling (optional)

Instructions
 

Rinse the quinoa under cold water to remove any bitterness.

    In a medium saucepan, bring the vegetable broth (or water) to a boil. Add the rinsed quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until all the liquid is absorbed. Fluff with a fork and let it cool.

      In a large mixing bowl, combine the black beans, corn, red bell pepper, avocado, cherry tomatoes, red onion, and cilantro.

        Once the quinoa is cooled, add it to the mixing bowl with the other ingredients.

          In a small bowl, whisk together the lime juice, cumin, chili powder, salt, and pepper. Pour this dressing over the salad and gently toss everything together until well combined.

            Drizzle with olive oil if desired and adjust seasoning to taste.
