For the Cookie Crust:

1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

1 teaspoon ground cinnamon

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

For the Apple Filling:

3 large apples, peeled and thinly sliced (Granny Smith works well)

½ cup granulated sugar

1 teaspoon ground cinnamon

1 tablespoon lemon juice

For Topping:

2 tablespoons granulated sugar

1 teaspoon ground cinnamon

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Apple Filling: In a large bowl, combine the sliced apples with granulated sugar, ground cinnamon, and lemon juice. Stir well to coat the apples evenly and set aside to let the flavors meld.

      Make the Cookie Crust: In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Add the egg and vanilla extract and mix until fully incorporated.

        Combine: Gradually add the dry ingredients to the wet mixture, stirring until just combined. The dough will be thick.

          Layer the Filling: Spread half of the cookie dough mixture evenly in the bottom of a greased 9x13 inch baking dish. Layer the apple mixture over the dough, spreading it evenly. Drop spoonfuls of the remaining cookie dough on top of the apples.

            Prepare the Topping: In a small bowl, mix together the granulated sugar and cinnamon for the topping. Sprinkle this mixture evenly over the cobbler.

              Bake: Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the top is golden and the apples are tender.

                Cool and Serve: Remove from the oven and let it cool for about 10 minutes. Serve warm, ideally with a scoop of vanilla ice cream or whipped cream.
