Ingredients
  

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup graham cracker crumbs

1 cup milk chocolate chips

1 cup mini marshmallows

Extra graham cracker crumbs for topping

Mini chocolate bars for topping (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish or line it with parchment paper for easy removal.

    Cream Butter and Sugars: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy. This should take about 3-4 minutes.

      Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until fully incorporated.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and graham cracker crumbs. Gradually add this dry mixture to the wet ingredients, mixing just until combined. Do not overmix.

          Fold in Chocolate and Marshmallows: Gently fold in the milk chocolate chips and mini marshmallows, reserving a handful for the top.

            Spread into Baking Dish: Pour the dough into the prepared baking dish and spread it evenly. You can lightly dampen your hands or use a spatula to smooth it out.

              Add Toppings: Sprinkle the reserved chocolate chips and marshmallows over the top of the dough. If desired, break up mini chocolate bars and add those as well for extra chocolatey goodness.

                Bake: Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out slightly sticky but not wet.

                  Cool and Cut: Remove the baking dish from the oven and let it cool completely in the pan. Once cooled, lift the bars out using the parchment paper (if lined) and cut into squares or rectangles.

                    Serve and Enjoy: Serve the S'mores cookie bars warm or at room temperature. These bars are perfect for a campfire treat or anytime you crave a s'mores-inspired snack!
