Once you’ve browned the ground beef and prepared your aromatic vegetables, it’s time to combine everything in your slow cooker. Start by transferring the cooked ground beef to the slow cooker, ensuring you leave behind any excess grease. Next, add the diced onions, minced garlic, and any other vegetables you’ve chosen to include, such as bell peppers or carrots.

Slow Cooker Tomato Tortellini Soup with Ground Beef

A delightful twist on a classic dish.

Ingredients
  

1 lb ground beef

1 medium onion, chopped

2 cloves garlic, minced

4 cups beef broth

1 (28 oz) can crushed tomatoes

1 (15 oz) can tomato sauce

2 tsp dried basil

1 tsp dried oregano

1 tsp sugar (optional, to reduce acidity)

Salt and pepper to taste

2 cups frozen cheese tortellini

1 cup fresh spinach, chopped

1 cup heavy cream (optional, for creaminess)

Grated Parmesan cheese, for serving

Fresh basil leaves, for garnish (optional)

Instructions
 

In a skillet over medium heat, brown the ground beef with the chopped onion and minced garlic until the beef is cooked through. Drain excess fat.

    Transfer the cooked ground beef mixture to the slow cooker.

      Add the beef broth, crushed tomatoes, tomato sauce, dried basil, oregano, sugar (if using), and salt and pepper. Stir to combine.

        Cover and cook on low for 6-8 hours or on high for 3-4 hours.

          About 30 minutes before serving, add the frozen tortellini and fresh spinach to the slow cooker.

            If you’re adding heavy cream for creaminess, stir it in about 10 minutes before serving.

              Once the tortellini is cooked through, taste and adjust seasoning if needed.

                Serve hot, topped with grated Parmesan cheese and fresh basil leaves, if desired.
