2 lbs beef sirloin, cut into bite-sized pieces

4 cups baby potatoes, halved

1/2 cup unsalted butter

6 cloves garlic, minced

1 medium onion, diced

2 tsp fresh thyme leaves (or 1 tsp dried thyme)

1 tsp paprika

Salt and pepper, to taste

1 cup beef broth

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned.

    Season the beef cubes with salt and pepper. In the same skillet, sear the beef in batches until browned on all sides (about 3-4 minutes per batch). Transfer the beef to the slow cooker.

      Add the halved baby potatoes and diced onion to the slow cooker with the beef.

        Pour in the sautéed garlic butter mixture and sprinkle the thyme and paprika over the ingredients in the slow cooker.

          Pour the beef broth over everything in the slow cooker. Give it a gentle stir to combine.

            Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the potatoes are cooked through.

              Once done, adjust seasoning with additional salt and pepper if needed, and garnish with chopped fresh parsley before serving.
