Ingredients
  

1 lb ground beef (or turkey)

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes with green chilies

1 packet taco seasoning

1 cup frozen tater tots

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Instructions
 

In a skillet over medium heat, brown the ground beef with diced onion and minced garlic until the meat is fully cooked. Drain any excess fat.

    Transfer the cooked beef mixture to the slow cooker. Add the kidney beans, black beans, corn, diced tomatoes (with juices), and taco seasoning. Stir until well combined.

      Season the mixture with salt and pepper to taste.

        Place the frozen tater tots evenly over the top of the casserole mixture in the slow cooker.

          Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the tater tots are golden and crispy.

            In the last 15 minutes of cooking, sprinkle the shredded cheddar and Monterey Jack cheeses on top, then cover to allow the cheese to melt.

              Once ready, turn off the slow cooker and let it sit for a few minutes. Garnish with freshly chopped cilantro before serving.
