1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 cup frozen mixed vegetables (peas, carrots, and corn)

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

2 cups shredded cheddar cheese

1 box (8 oz) cornbread mix (plus ingredients as needed per package instructions)

Fresh cilantro or green onions for garnish (optional)

Brown the Meat: In a skillet over medium heat, cook the ground beef (or turkey) until browned. Drain excess fat, then add diced onions and minced garlic. Sauté for about 3-4 minutes until the onions are soft.

    Combine Ingredients in Slow Cooker: Transfer the meat mixture to the slow cooker. Stir in the black beans, corn, diced tomatoes with green chilies, mixed vegetables, chili powder, cumin, paprika, salt, and pepper. Combine everything well.

      Cook in Slow Cooker: Cover and cook on low for 6-7 hours or on high for 3-4 hours. Stir occasionally if possible.

        Prepare Cornbread Batter: About 30 minutes before you are ready to serve, prepare the cornbread mix according to package instructions.
