Ingredients
  

1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning (or homemade)

2 cups frozen tater tots

1 cup shredded cheddar cheese

1 cup sour cream (optional for serving)

Fresh cilantro or green onions for garnish (optional)

Instructions
 

Brown the Meat: In a skillet over medium heat, brown the ground beef or turkey along with the diced onion and minced garlic until the meat is cooked through and the onions are translucent. Drain any excess fat.

    Combine Ingredients: In the slow cooker, combine the cooked meat mixture, black beans, corn, diced tomatoes (with their juice), and taco seasoning. Stir everything together until well mixed.

      Layer Tater Tots: Spread the frozen tater tots evenly over the top of the casserole mixture in the slow cooker. Do not stir them in; they will steam and become crispy on top as they cook.

        Cook: Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours until the tater tots are heated through and golden brown.

          Add Cheese: About 15 minutes before serving, sprinkle the shredded cheddar cheese over the top of the casserole. Re-cover and allow the cheese to melt.

            Serve: Once done, scoop portions into bowls. If desired, top with a dollop of sour cream and sprinkle with fresh cilantro or green onions for added flavor.
