Ingredients
  

1 lb ground beef (or turkey)

1 medium onion, diced

2 cloves garlic, minced

1 cup frozen corn

1 cup black beans, drained and rinsed

1 can (10.5 oz) cream of mushroom soup

1 cup diced tomatoes with green chilies (with juice)

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

1 cup shredded cheddar cheese

1 bag (about 30 oz) tater tots

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

In a skillet over medium heat, cook the ground beef (or turkey) until browned, about 5-7 minutes. Drain excess fat if necessary.

    Add the diced onion and minced garlic to the skillet, sautéing for an additional 3-4 minutes until softened.

      In the slow cooker, combine the cooked meat mixture, frozen corn, black beans, cream of mushroom soup, diced tomatoes (with juice), chili powder, cumin, smoked paprika, and salt and pepper. Stir well to combine all ingredients thoroughly.

        Spread the tater tots evenly over the mixture in the slow cooker.

          Cover and cook on low for 6-7 hours or on high for 3-4 hours.

            In the last 30 minutes of cooking, sprinkle the shredded cheddar cheese on top of the tater tots and cover until melted.

              Once done, serve the casserole hot, garnished with fresh cilantro if desired.
