Slow Cooker Cowboy Casserole

Ingredients
  

1 lb ground beef (or turkey)

1 large onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn kernels, drained

1 can (10 oz) diced tomatoes with green chilies

2 cups frozen mixed vegetables (such as peas, carrots, and corn)

1 cup beef broth

1 tbsp taco seasoning

1 tsp smoked paprika

Salt and pepper to taste

4 cups tater tots (fresh or frozen)

2 cups shredded cheddar cheese

Fresh cilantro, for garnish (optional)

Instructions
 

In a skillet over medium heat, brown the ground beef (or turkey) with the diced onion and minced garlic until fully cooked. Drain excess fat.

    Transfer the cooked meat mixture to your slow cooker. Add in the black beans, corn, diced tomatoes with green chilies, frozen mixed vegetables, beef broth, taco seasoning, smoked paprika, salt, and pepper. Stir well to combine.

      Cover and cook on low for 6-8 hours or on high for 3-4 hours.

        About 30 minutes before serving, gently stir in the tater tots, spreading them evenly over the mixture in the slow cooker. Cover and continue to cook until the tater tots are heated through and crispy.

          Once done, sprinkle the shredded cheddar cheese over the top, cover, and let it melt for about 10 minutes.

            Garnish with fresh cilantro if desired, serve warm, and enjoy your hearty cowboy casserole!
