Slow Cooker Chicken Taco Soup

Ingredients
  

1 pound boneless, skinless chicken breasts

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes with green chilies

1 can (10 oz) enchilada sauce

1 small onion, diced

3 cloves garlic, minced

1 packet taco seasoning (or homemade taco seasoning)

1 cup chicken broth

1 bell pepper (any color), diced

1 cup shredded cheese (cheddar or Mexican blend)

Optional toppings: sour cream, avocado, fresh cilantro, lime wedges

Instructions
 

Prepare the Base: Place the boneless chicken breasts at the bottom of the slow cooker. Add the diced onion, bell pepper, and minced garlic on top of the chicken.

    Layer the Ingredients: Pour in the black beans, corn, diced tomatoes (with their juices), enchilada sauce, and chicken broth. Sprinkle the taco seasoning evenly over the mixture.

      Cook It Slow: Cover the slow cooker with the lid and set it on low heat. Cook for 6-8 hours, or on high for 3-4 hours, until the chicken is fully cooked and tender.

        Shred the Chicken: About 30 minutes before serving, remove the chicken breasts from the slow cooker and shred them with two forks. Return the shredded chicken back to the soup and stir to combine.

          Finish and Serve: If desired, stir in half of the shredded cheese into the soup for creaminess. Ladle the soup into bowls and top with additional cheese and your choice of toppings such as sour cream, avocado slices, fresh cilantro, or lime wedges.
