Slow Cooker Balsamic Pork Roast

Ingredients
  

3-4 lbs pork shoulder or pork loin

1 cup balsamic vinegar

1/2 cup low-sodium soy sauce

1/4 cup honey

4 cloves garlic, minced

1 medium onion, chopped

1 tablespoon Dijon mustard

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon black pepper

Salt to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Sear the Pork: In a large skillet over medium-high heat, add olive oil. Season the pork with salt and black pepper. Once the oil is hot, sear the pork on all sides until browned, about 3-4 minutes per side. This step enhances the flavor of the meat.

    Prepare the Sauce: In a bowl, mix together balsamic vinegar, soy sauce, honey, minced garlic, Dijon mustard, thyme, and rosemary until well combined.

      Add Ingredients to Slow Cooker: Place the chopped onion at the bottom of the slow cooker. Transfer the seared pork shoulder on top of the onions. Pour the balsamic sauce over the pork, ensuring it is well coated.

        Cook: Cover and cook on low for 8 hours or high for 4 hours, until the pork is fork-tender and easily shreds.

          Shred and Serve: Once cooked, carefully remove the pork from the slow cooker and place it on a cutting board. Use two forks to shred the meat. Return the shredded pork to the slow cooker and stir it in with the sauce to absorb all the flavors.

            Garnish and Enjoy: Serve the balsamic pork roast warm, garnished with fresh parsley. It pairs perfectly with mashed potatoes, rice, or crusty bread to soak up the delicious sauce.
