Ingredients
  

1 pound ground beef

1 medium onion, diced

1 green bell pepper, diced

1 can (15 oz) Sloppy Joe sauce (store-bought or homemade)

1 cup frozen corn

1 can (15 oz) kidney beans, drained and rinsed

2 cups tortilla chips, crushed

2 cups shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon chili powder

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Ground Beef: In a large skillet over medium heat, brown the ground beef. Break it apart with a wooden spoon as it cooks. Once browned, drain any excess fat.

      Add Vegetables: Stir in the diced onion and green bell pepper, cooking until softened, about 5 minutes.

        Mix in Sauce and Beans: Add the Sloppy Joe sauce, corn, kidney beans, garlic powder, chili powder, salt, and pepper to the beef mixture. Stir well and let it simmer for about 5 minutes to heat through and combine the flavors.

          Layer the Casserole: In a greased 9x13 inch baking dish, spread half of the crushed tortilla chips evenly across the bottom. Pour the beef mixture over the chips to create an even layer. Sprinkle 1 cup of shredded cheddar cheese on top.

            Top with Chips and Cheese: Add the remaining crushed tortilla chips on top of the beef layer, followed by the rest of the cheese for that gooey finish.

              Bake: Cover the casserole with foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes or until the top is golden and bubbly.

                Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro or parsley if desired, then serve warm.
