1 cup all-purpose flour

2 large eggs

1 ½ cups milk

2 tablespoons melted butter (plus more for cooking)

1 tablespoon sugar

1 teaspoon vanilla extract

1 ½ cups fresh strawberries, hulled and sliced

2 tablespoons sugar

1 teaspoon lemon juice

½ teaspoon vanilla extract

For Garnish:

Whipped cream (optional)

Powdered sugar (optional)

Fresh mint leaves (optional)

Instructions
 

Prepare the Strawberry Filling: In a bowl, combine the sliced strawberries, sugar, lemon juice, and vanilla extract. Toss gently and let the mixture sit for about 10-15 minutes to allow the sugars to draw out the juices from the strawberries.

    Make the Crepe Batter: In a large mixing bowl, whisk together the flour, eggs, milk, melted butter, sugar, vanilla extract, and salt until smooth. Let the batter rest for about 30 minutes to one hour. This helps to make the crepes tender.

      Cook the Crepes: Heat a non-stick skillet or crepe pan over medium heat and add a small amount of butter to coat the surface. Pour about ¼ cup of the crepe batter into the pan and quickly swirl it around to spread it evenly into a thin layer. Cook for 1-2 minutes until the edges start to lift and the bottom is lightly golden.

        Flip and Cook: Carefully flip the crepe using a spatula and cook for another 30 seconds to 1 minute on the other side. Remove from the pan and place on a plate. Repeat with the remaining batter, stacking the crepes on top of each other and adding a touch of butter between layers to prevent sticking.

          Assemble the Crepes: Take a crepe, add a spoonful of the strawberry filling in the center, and fold the crepe over. You can either fold it into quarters or roll it up like a burrito. Repeat with remaining crepes.
