8 large eggs

1 pound breakfast sausage (link or bulk)

2 cups baby spinach

1 cup cherry tomatoes, halved

1 bell pepper, diced (any color)

1 medium red onion, diced

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh chives or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the Sausage: If using sausage links, slice them into rounds. If using bulk sausage, crumble it into bite-sized pieces.

      Cook the Sausage: In a large skillet over medium heat, add the sausage and cook until browned and cooked through, about 7-10 minutes. Drain excess grease if needed.

        Mix Vegetables: In a large bowl, combine the cooked sausage, baby spinach, cherry tomatoes, bell pepper, and red onion. Drizzle with olive oil and sprinkle with garlic powder, paprika, salt, and pepper. Toss until everything is well coated.

          Spread on Sheet Pan: Spread the sausage and vegetable mixture evenly across a large baking sheet.

            Make Wells for Eggs: Using the back of a spoon, make 8 small wells in the mixture. Carefully crack one egg into each well.

              Add Cheese: Sprinkle the shredded cheddar cheese evenly over the entire sheet pan, ensuring some melts on top of the eggs.

                Bake: Place the sheet pan in the oven and bake for about 15-20 minutes, or until the eggs are set to your liking and the cheese is bubbly.

                  Garnish & Serve: Remove from the oven and let cool slightly. Garnish with freshly chopped chives or parsley if desired. Slice into squares and serve warm.
