8 oz tricolor rotini pasta

1 cup cooked shrimp, peeled and deveined

1 cup scallops, cooked and halved

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup black olives, sliced

1/4 cup capers, rinsed and drained

1/4 cup fresh parsley, chopped

1/2 cup feta cheese, crumbled

Zest and juice of 1 lemon

1/4 cup olive oil

1 tsp Dijon mustard

Salt and pepper to taste

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the tricolor rotini pasta and cook according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside to cool.

    Prepare the Seafood: If necessary, cook the shrimp and scallops (if using raw), and allow them to cool. Otherwise, just make sure they're ready for mixing.

      Mix the Vegetables: In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, black olives, capers, and parsley.

        Combine Ingredients: Add the cooled pasta to the bowl with the vegetables along with the shrimp and scallops.

          Make the Dressing: In a small bowl, whisk together the lemon zest, lemon juice, olive oil, Dijon mustard, salt, and pepper until well combined.

            Dress the Salad: Pour the dressing over the pasta and seafood mixture. Gently toss everything together until all ingredients are evenly coated.

              Add Cheese: Sprinkle the crumbled feta cheese over the top. Lightly mix it in, being careful not to break up the feta too much.

                Chill and Serve: Cover the bowl with plastic wrap and let the salad chill in the refrigerator for at least 1 hour before serving to let the flavors meld.

                  Garnish (Optional): Serve chilled with an extra sprinkle of fresh parsley and a lemon wedge on the side for added freshness.
