1 pound Italian sausage (mild or spicy, according to preference)

1 onion, diced

3 cloves garlic, minced

2 carrots, sliced

2 celery stalks, diced

1 teaspoon Italian seasoning

1 can (14 oz) diced tomatoes, with juices

6 cups chicken or vegetable broth

1 package (9 oz) cheese tortellini

3 cups fresh spinach

Salt and pepper, to taste

Grated Parmesan cheese, for garnish

Olive oil, for sautéing

Fresh basil, for garnish (optional)

Instructions
 

Brown the Sausage: In a large pot, heat a drizzle of olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a wooden spoon. Remove excess grease if necessary.

    Sauté the Vegetables: Add the diced onion, minced garlic, sliced carrots, and diced celery to the pot. Sauté for about 5-7 minutes or until the vegetables are tender.

      Season and Simmer: Stir in the Italian seasoning, and then add the diced tomatoes along with their juices. Pour in the chicken or vegetable broth and bring the mixture to a gentle simmer.

        Cook the Tortellini: Once the soup is simmering, add the cheese tortellini. Cook according to package instructions, usually around 3-5 minutes.

          Add Spinach: Just before serving, stir in the fresh spinach and let it wilt in the hot soup for a couple of minutes.

            Season to Taste: Taste the soup and season with salt and pepper as needed.

              Serve and Garnish: Ladle the soup into bowls and sprinkle with grated Parmesan cheese and fresh basil if desired.
