1 pound breakfast sausage (mild or spicy, according to preference)

1 medium onion, diced

1 bell pepper, diced (any color)

4 large eggs

8 ounces cream cheese, softened

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

30 ounces frozen hash browns (or 4 cups homemade)

1 cup milk

2 tablespoons olive oil (for cooking)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

    Cook the Sausage: In a large skillet over medium heat, add the breakfast sausage. Break it up with a spoon and cook until browned and fully cooked (about 5-7 minutes). Remove any excess grease if necessary.

      Sauté the Vegetables: In the same skillet, add the diced onion and bell pepper. Sauté for about 3-4 minutes until they are tender. Remove from heat.

        Prepare the Egg Mixture: In a large mixing bowl, combine the softened cream cheese, eggs, milk, garlic powder, onion powder, and a pinch of salt and pepper. Whisk until well blended and creamy.

          Combine Ingredients: In a greased 9x13 inch baking dish, layer the frozen hash browns evenly across the bottom. Next, spread the cooked sausage and vegetable mixture over the hash browns. Pour the egg and cream cheese mixture on top, ensuring it is evenly distributed. Finally, sprinkle shredded cheddar cheese over the top.
