Ingredients
  

For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons brown sugar

For the Apple Pie Filling:

3 cups Granny Smith apples, peeled, cored, and sliced

¼ cup brown sugar

1 teaspoon cinnamon

1 tablespoon lemon juice

1 tablespoon cornstarch

For the Cheesecake Filling:

16 oz cream cheese, softened

¾ cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

½ cup sour cream

¼ cup heavy cream

For the Salted Caramel Sauce:

1 cup granulated sugar

6 tablespoons unsalted butter

½ cup heavy cream

1 teaspoon sea salt

Instructions
 

Prepare the Crust:

    Preheat the oven to 325°F (163°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and brown sugar until well mixed. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.

      Make the Apple Pie Filling:

        In a large bowl, combine apple slices with brown sugar, cinnamon, lemon juice, and cornstarch. Toss until apples are evenly coated. In a sauté pan over medium heat, cook the apples for about 5-7 minutes until they are slightly tender but not fully softened. Remove from heat and set aside.

          Prepare the Cheesecake Filling:

            In a large mixing bowl, beat the softened cream cheese until creamy. Gradually add granulated sugar and continue to beat until smooth. Mix in the vanilla extract, then add eggs one at a time, mixing well after each addition. Stir in sour cream and heavy cream until combined and smooth.

              Assemble the Cheesecake:

                Pour half of the cheesecake filling over the cooled crust. Layer the apple pie filling evenly over the cheesecake mixture. Then, pour the remaining cheesecake filling on top, ensuring it covers the apples completely.

                  Bake the Cheesecake:

                    Bake in the preheated oven for 55-65 minutes, or until the center is set (it should still have a slight jiggle). Turn off the oven, crack the door, and let the cheesecake cool in the oven for another hour to prevent cracking.

                      Make the Salted Caramel Sauce:

                        In a saucepan over medium heat, melt granulated sugar, stirring constantly until it melts and turns a golden amber color. Add in butter and mix until melted. Carefully pour in heavy cream while stirring (the mixture will bubble up), and mix until fully combined. Add sea salt and stir. Let it cool slightly.

                          Chill and Serve:

                            Once the cheesecake is cool, refrigerate for at least 4 hours or overnight. Before serving, drizzle the salted caramel sauce over the cheesecake. Optionally, garnish with additional apple slices or whipped cream.
