Ingredients
  

1 cup honey

1 cup granulated sugar

1/2 cup unsalted butter, softened

3 large eggs

1 teaspoon baking soda

4 cups all-purpose flour

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon salt

1 1/2 cups heavy cream

1 cup powdered sugar

1 teaspoon vanilla extract

Chopped walnuts or hazelnuts (for garnish)

Instructions
 

Prepare the Dough:

    - In a large mixing bowl, combine the honey, granulated sugar, and softened butter. Mix until the ingredients are well combined and the mixture is creamy.

      - Add the eggs to the mixture one at a time, beating well after each addition.

        - In a separate bowl, whisk together the baking soda, flour, cinnamon, ginger, and salt. Gradually add the dry ingredients to the honey mixture. Stir until a dough forms.

          Bake the Layers:

            - Preheat your oven to 350°F (175°C). Divide the dough into 6 equal portions and roll each into a thin round (about 1/8 inch thick).

              - Place each round onto a parchment-lined baking sheet. Bake each layer for 5-7 minutes, or until golden brown. Once baked, let the layers cool completely.

                Prepare the Cream Filling:

                  - In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form. This will be your cream filling.

                    Assemble the Cake:

                      - Layer the cooled rounds in a serving dish, spreading a layer of cream filling between each cake layer.

                        - Once all layers are stacked, cover the top and sides of the cake with the remaining cream filling.

                          Garnish and Chill:

                            - Sprinkle chopped walnuts or hazelnuts on top and around the sides of the cake for added texture and flavor.

                              - Allow the cake to chill in the refrigerator for at least 4 hours or overnight for best results, to let the flavors meld together.
