Rotel Cream Cheese Sausage Balls

1 pound breakfast sausage (mild or spicy, depending on preference)

8 oz cream cheese, softened

1 can (10 oz) Rotel tomatoes with green chilies, drained

2 cups shredded cheddar cheese

1 ½ cups biscuit baking mix

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

Optional: ¼ teaspoon cayenne pepper for extra heat

Instructions
 

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the softened cream cheese and breakfast sausage. Mix until well integrated.

      Fold in the drained Rotel tomatoes, shredded cheddar cheese, biscuit baking mix, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using). Mix until all ingredients are evenly combined.

        Using your hands, form the mixture into small balls, about 1 inch in diameter, and place them on the prepared baking sheet, leaving a little space between each ball.

          Bake in the preheated oven for 20-25 minutes, or until the sausage balls are golden brown and cooked through.

            Remove from the oven and let them cool for a few minutes before serving.
