Ingredients

3 cups Rice Krispies cereal

1 cup all-purpose flour

½ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened

¾ cup brown sugar, packed

½ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup chocolate chips (semi-sweet or milk chocolate)

½ cup mini marshmallows (optional)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.

Mix Dry Ingredients: In a medium bowl, combine the flour, baking soda, and salt. Whisk together until well combined.

Cream Butter and Sugars: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using an electric mixer on medium speed until light and fluffy.

Add Egg and Vanilla: Add the egg and vanilla extract to the butter-sugar mixture. Mix until fully incorporated.

Combine Dry and Wet Ingredients: Gradually add the dry mixture to the wet ingredients, mixing until just combined. Be careful not to overmix.

Stir in Rice Krispies and Chocolate Chips: Gently fold in the Rice Krispies cereal, chocolate chips, and mini marshmallows (if using) until evenly distributed throughout the dough.

Scoop and Shape Cookies: Using a cookie scoop or tablespoon, drop mounds of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly soft, but they'll firm up as they cool.

Cool: Remove from the oven and let them cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
