1 ½ cups all-purpose flour

1 cup granulated sugar

1 tsp baking soda

½ tsp salt

1 tsp cocoa powder

1 cup vegetable oil

1 cup buttermilk, at room temperature

2 large eggs

2 tbsp red food coloring

1 tsp vanilla extract

1 tsp white vinegar

For the Strawberry Cheesecake Layer:

16 oz cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

1 cup heavy cream

1 cup fresh strawberries, pureed

¼ cup fresh strawberries, diced for garnish

For the Topping:

Fresh strawberries for decoration

Whipped cream (optional)

Cocoa powder for dusting

Instructions
 

Prepare the Red Velvet Layer:

    - Preheat the oven to 350°F (175°C). Grease and line the bottom of a 9-inch springform pan with parchment paper.

      - In a large mixing bowl, whisk together the flour, sugar, baking soda, salt, and cocoa powder.

        - In another bowl, mix the vegetable oil, buttermilk, eggs, food coloring, vanilla extract, and vinegar until well combined.

          - Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

            - Pour the batter into the prepared pan. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let it cool completely in the pan.

              Prepare the Strawberry Cheesecake Layer:

                - In a mixing bowl, beat the softened cream cheese until smooth and creamy.

                  - Gradually add the powdered sugar and vanilla extract, beating until well combined.

                    - In a separate bowl, whip the heavy cream until soft peaks form and gently fold it into the cream cheese mixture.

                      - Add the pureed strawberries and fold until fully incorporated.

                        Assemble the Cheesecake:

                          - Once the red velvet cake is completely cooled, remove it from the springform pan. Place it back into the springform pan for layering.

                            - Spread the strawberry cheesecake mixture evenly over the red velvet layer. Smooth the top with a spatula.

                              - Refrigerate the cheesecake for at least 4 hours, preferably overnight, to allow it to set properly.

                                Serve:

                                  - When ready to serve, carefully remove the springform pan. Garnish with fresh strawberries on top and, if desired, a dollop of whipped cream.
