1 cup unsalted butter, softened

3/4 cup brown sugar, packed

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup fresh raspberries (or frozen, thawed)

1 cup semi-sweet chocolate chips

1/2 cup white chocolate chips (optional)

1/4 cup chopped walnuts (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy.

      Beat in the egg and vanilla extract until everything is well combined.

        In a separate bowl, whisk together the flour, baking soda, and salt.

          Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

            Gently fold in the raspberries, semi-sweet chocolate chips, white chocolate chips (if using), and walnuts (if using), being careful not to break up the raspberries too much.

              Using a cookie scoop or tablespoon, drop spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie as they will spread.

                Bake in the preheated oven for 10 to 12 minutes, or until the edges are lightly golden and the centers are set.

                  Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
