Ingredients
  

1 cup fresh raspberries

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

2 tablespoons raspberry preserves (optional)

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Crust:

    In a bowl, mix the graham cracker crumbs with melted butter until well combined. Divide the mixture into the bottom of serving glasses or parfait cups, pressing it down gently to form an even layer.

      Make the Cheesecake Filling:

        In another bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.

          Whip the Cream:

            In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.

              Layer the Parfaits:

                Add a layer of the cheesecake filling over the graham cracker crust in each parfait cup, followed by a layer of fresh raspberries and, if desired, a spoonful of raspberry preserves. Repeat the layers until the cups are full, finishing with a layer of raspberries on top.

                  Chill and Serve:

                    Cover the parfaits and refrigerate for at least 2 hours to allow the flavors to meld and the cheesecake to firm up. Before serving, garnish with fresh mint leaves for a pop of color.
