1 sheet of frozen puff pastry (thawed)

1 cup assorted fresh fruits (strawberries, blueberries, kiwi, and raspberries)

1 cup lemon curd (store-bought or homemade)

1 cup heavy cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract

Fresh mint leaves for garnish (optional)

Zest of 1 lemon (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Puff Pastry: On a lightly floured surface, roll out the puff pastry sheet gently to smooth out any creases. Cut it into 4 equal squares.

      Shape the Tarts: Place each pastry square on a parchment-lined baking sheet. Using a sharp knife, score a smaller square inside each pastry about 1/2 inch from the edges. Be careful not to cut all the way through. This will create a border for your tart.

        Bake the Pastries: Bake the puff pastry squares in the preheated oven for 15-20 minutes or until they are golden brown and puffed up. Remove from the oven and let them cool completely.

          Prepare the Whipped Cream: In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Using a hand mixer or a stand mixer, whip the cream until stiff peaks form.

            Assemble the Tarts: Once the puff pastry shells have cooled, carefully press down the center of each tart to create a small well. Fill each well with a generous spoonful of lemon curd.

              Add the Fruits: Arrange the fresh fruits artfully on top of the lemon curd in each tart.

                Top with Whipped Cream: Pipe or dollop the lemon curd whipped cream over the fruits.

                  Garnish and Serve: Sprinkle lemon zest over the tarts and garnish with fresh mint leaves as desired. Serve immediately and enjoy!
