Ingredients
  

4 large russet potatoes, peeled and diced

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream (or coconut cream for a vegan version)

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 tablespoon olive oil

Salt and pepper to taste

Fresh chives or green onions for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for about 3-5 minutes until the onion is translucent and fragrant.

    Add the diced potatoes, vegetable broth, dried thyme, smoked paprika, salt, and pepper. Bring to a boil, then reduce the heat to a simmer. Cover and let cook for 20-25 minutes, or until the potatoes are tender.

      Once the potatoes are cooked, use an immersion blender to puree the soup to your desired consistency. For a chunkier soup, blend only half of it.

        Stir in the heavy cream and heat through for an additional 5 minutes. Adjust seasoning if necessary.

          Serve hot, garnished with fresh chives or green onions for added flavor and color.
