Casseroles hold a special place in the hearts and homes of many. Historically, these oven-baked dishes emerged as a practical way to feed families on a budget. During times of economic hardship, resourceful cooks would utilize leftovers and inexpensive ingredients to create filling meals that could stretch over several days. The Poor Man's Husband Casserole is a perfect example of this culinary tradition, showcasing how simple components can come together to form a satisfying dish.

Poor Man's Husband Casserole

Ingredients
  

1 lb ground beef (or ground turkey for a lighter option)

1 onion, chopped

2 cloves garlic, minced

3 cups frozen mixed vegetables (peas, corn, carrots)

4 medium potatoes, thinly sliced

1 can (10.5 oz) cream of mushroom soup

1 cup beef broth (or vegetable broth)

1 tsp dried thyme

1 tsp paprika

Salt and pepper to taste

1 cup shredded cheddar cheese (optional)

Olive oil for cooking

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Beef: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion becomes translucent. Add the ground beef and cook until browned. Drain excess fat if needed.

      Mix in Vegetables: Stir in the frozen mixed vegetables, cream of mushroom soup, beef broth, thyme, paprika, salt, and pepper. Let simmer for about 5 minutes to combine flavors.

        Prepare the Potatoes: In a greased 9x13 inch baking dish, layer half of the sliced potatoes at the bottom. Spread the beef and vegetable mixture over the potatoes, then layer the remaining sliced potatoes on top.

          Add Cheese: If you're using cheese, sprinkle it over the top layer of potatoes.

            Cover & Bake: Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes. After 45 minutes, remove the foil and bake for an additional 15-20 minutes, or until the potatoes are fork-tender and the top is slightly golden.

              Cool & Serve: Allow the casserole to cool for a few minutes before serving. It goes well with a side salad or crusty bread.
