Ingredients
  

2 ¼ teaspoons active dry yeast (1 packet)

½ cup warm milk (110°F or 43°C)

¼ cup granulated sugar, divided

2 large eggs

½ teaspoon vanilla extract

¼ cup unsalted butter, melted

3 ½ cups all-purpose flour, plus extra for dusting

½ teaspoon salt

Oil for frying (vegetable or canola)

Powdered sugar or cinnamon-sugar for coating

Instructions
 

In a small bowl, combine the warm milk with 1 tablespoon of the sugar and the yeast. Let it sit for about 5-10 minutes until frothy.

    In a large mixing bowl, whisk together the remaining sugar, eggs, vanilla extract, and melted butter until smooth.

      Pour the yeast mixture into the egg mixture, stirring to combine.

        Gradually add in the flour and salt, mixing until a soft dough begins to form.

          Knead the dough on a floured surface for about 5-7 minutes until it is smooth and elastic. You can also use a stand mixer with a dough hook for this step.

            Place the dough in a lightly greased bowl, cover with plastic wrap or a clean kitchen towel, and let it rise in a warm place for about 1-1.5 hours, or until doubled in size.

              Once risen, punch down the dough and turn it out onto a lightly floured surface. Roll out to about ½ inch thick.

                Use a doughnut cutter or two round cookie cutters (one larger and one smaller) to cut out doughnuts. Re-roll the scraps to cut out more doughnuts if possible.

                  Place the cut doughnuts on a floured baking sheet, cover with a towel, and let rise for another 30-45 minutes until puffy.

                    In a large heavy-duty pot, heat oil to 350°F (175°C). Carefully fry the doughnuts in batches for about 1-2 minutes on each side until golden brown. Use a slotted spoon to transfer them to a paper towel-lined plate to drain.

                      While still warm, toss the doughnuts in powdered sugar or toss them in a mixture of granulated sugar and cinnamon for a delicious coating.
